Taste of the week - Sliders at Px Cocktail Club

For those of you who don't know (ie French people), a "slider" is a tiny hamburger popular in coolio bars in gentrifying 'hoods all over the US, and until now haven't hit Paris.

Last night at the Prescription Cocktail Club:  Yves Marie Le Bourdonnec, 40 day aged meat patties, vieux compté, onions and truffled mayonnaise on Poujauran mini hamburger rolls.

No pix, you should be salivating by now.

yeah. i am too and I'm a long way from paris at the moment so I can't even try one anytime soon.

Wow, they sound amazing. I have been meaning to go Le Bourdonnec's shop in Asnières, ever since I read that Yannick Alleno gets his beef for burgers there. I wonder if he would sell you the same mix?

The term 'Slider' to describe small burgers was originally used in reference to restaurant chain White Castle's small square shaped hamburger patties. The burgers were actually cooked on steam grills perforated with small holes that allowed steam to rise - add chopped onion, pickle, and a moist bun. They sold them hot by the bag.
