Clandestine ambience, free cognac cocktails and langoustine nems, great company, chats with celeb chefs. What could be better?

Hi Adrian,
Nice blog, wish I lived in Paris after reading. I have a favour to ask. My french is quite rusty, and so I was having issues understanding Le Fooding reviews. My brother and I are bringing our father to Paris in January for his 60th birthday present, with the centrepiece being a wonderful dinner on the Saturday night. He loves his food, is adventurous but doesn't do pretentious, reeaaaly appreciates a good wine list, doesn't need to see or be seen, and we would like to be able to have a conversation without having to shout. We will probably be staying in the 5th, 6th or 7th. We don't need a view of the Eiffel Tower but would like to feel we are in Paris as opposed to any other cosmopolitan city. And our budget would be around €300 including good wine. Could you recommend something please? I would be very grateful, as it is a bit of a minefield to wade through the various guides as they can be aimed at different target audiences. I'm sorry to leave this as a comment for all to see, as you probably don't want to encourage this sort of thing, but I feel you to be a beacon of hope to me (sheesh, sorry for all mixed metaphors/similes!). I want this trip to be memorable for the right reasons basically. So pleeeeease, would you put your thinking cap on, and give me a few suggestions. Thanks so much,
